What's the first thing you think of when you think of the holidays? Eggnog? Presents? A fireplace? For me it's peppermint. And when I think about peppermint, I instantly get excited for the holidays. These peppermint brownies are a great dessert if you're looking for something chocolatey and festive but not overpowered by peppermint.

Peppermint Brownies

    Ingredients

  • 2 sticks unsalted butter cut into small pieces
  • 16 oz bittersweet chocolate chopped
  • 2 teaspoons pure peppermint extract
  • 4 large eggs
  • 1 3/4 cups packed light brown sugar
  • 3/4 cup all-purpose flour
  • 1 teaspoon fine sea salt
  • 4 candy canes crushed approx. 1/3 cup
  • Step 1

    Preheat oven to 350ºF. Butter a 9 x 13-inch baking pan and line with parchment paper; allow 2 inches to hang over the edges.

  • Step 2

    In a heatproof bowl, combine 2/3 of the chopped chocolate and the 2 sticks of butter. Place the bowl over a simmering pot of water and stir until melted.

    Scrape the chocolate into a different bowl and let cool. Add the remaining chopped chocolate and peppermint extract to the heatproof bowl and stir until melted. Place in a separate bowl to add to the top of the brownies later.

    In a separate bowl, whisk the eggs and brown sugar together, then slowly whisk in the chocolate and butter mixture.

    Sprinkle in the flour and salt and whisk until all is well combined.

  • Step 6

    Pour batter evenly into pan. Then add the separate peppermint and chocolate mixture along the top of the batter.

  • Step 7

    After letting the brownies bake for 15 minutes, remove and sprinkle with the crushed candy canes. Then allow cook for 10 to 15 more minutes.

    Remove the brownies from the oven and let cool for 2 hours before eating.
